Koshihikari rice is considered the ultimate Japanese sushi rice. For many years it was exclusively grown in Japan, and only polished rice that would not germinate was allowed to be exported. Since 2003, Koshihikari has been successfully cultivated in the fertile valleys of Northern California. Koshihikari is a super-premium short grain rice that has a mild sweet taste, firm in texture yet creamy and sticky so that it holds its shape. Often called "Koshi rice" - this Japanese variety is sure to delight the rice connoisseur.
