Grown in the Po River Valley of Northern Italy, Arborio rice cultivation flourishes due to hot summers and plentiful irrigation systems. Its distinguishing feature is a higher than normal starch content which releases during cooking for a wonderfully, creamy texture. Riso Angelita is "superfino" grade, the largest of the grains available. Consequently, it is the most premium quality for traditional risotti preparation.

Value - Since Arborio rice absorbs large quantities of liquid in the cooking process, the yield is more generous than with other varieties. When other items such as shrimp or chicken and fresh vegetables are added, the dish easily becomes a main course.
